so i realized something - it's a week till the dreaded time of the month is here again. madam pms has arrived and it's not looking good.

last night i was dead tired and emo but instead of hopping into the shower and plopping into bed i decided to bake instead. i picked something really quick and easy because i seriously lack ingredients (vanilla extract!) and magic machines (aka my kitchenaid and magimix) at my place to make anything fun </3

i love cheese and i love mochi so i turned to the only thing that i am sure that i could bake in my place - cheddar mochi bread (a cheats version of the brazillian pão de queijo. it is super easy to make and if you are lazy like i am, you dont really have to make them as small as it is called for (though there really isn't much to it.

i used the recipe from what to cook today and it was a total win for my tummy!

a few tips and tricks from this lazy baker to you:

i just used the random packet of pizza blend cheese 'cause that was all that i had in the fridge at 11pm. and of course i used a wee bit more than it called for. there is no such thing as too much cheese!

i used salted butter when i baked because i really dont like baking with coconut oil. i always can taste it no matter what it's added into! the only time i do not mind it is when i use it to make popcorn. somehow it works best then.

it says that the dough might be sticky but i did not have any issues here actually. my dough was super easy to work with and it didnt really stick to my hands at all. i thank the butter for that!

silicon mat for lyfe! seriously, if you don't have one please go out and get yourself a few. super easy clean up win! and it's environmentally friendly too double win!

it's ok if you get lazy and roll less balls than it calls for in the recipe. i doubled the recipe but only made 18 balls. but when it comes to baking i think you dont really have to add on too much baking time. the crust becomes too thick and its less fun to eat that way.

ingredients
dry ingredients:
  • 110 grams glutinous rice flour
  • 15 grams tapioca flour
  • 1/2 tsp salt
  • 45 grams shredded cheddar cheese
wet ingredients:
  • 1 large egg, beaten
  • 60ml whole milk
  • 35 grams melted butter / melted coconut oil 
instructions
preparing the dough
whisk all the dry ingredients together in a mixing bowl. in another mixing bowl, whisk together the wet ingredients. gradually fold in the dry ingredients until you can form a dough. it will be slightly sticky to the touch but you should be able to form a dough

shaping
preheat the oven to 350F and line baking sheet with parchment paper or silicon mat. 

divide the dough into 12 equal pieces and rollinto roughly 1.5 inch size smooth balls. place on the baking sheet at leat 1-inch apart

baking
1. spray some mist of water on top of the ball and place in the oven, 3rd rack from the top and bake for about 20 minutes until the bread is crusty on the outside, but soft and no longer wet inside

2. remove from the oven and let stand for about 5 minutes and then transfer to cooling rack to let them cool down completely. they are best eaten when fresh.

best when fresh is a total understatement! i literally eat them off the pan immediately out of the oven in the name of making sure it is cooked through :D
